Your journey follows the sacred water and rice of the region, from the foot of Mount Miwa—home to the "God of Sake"—to the historic merchant streets of Gose and the mist-covered forests of Yoshino. Along the way, you will step behind the curtain of some of Japan’s most prestigious breweries to meet the Master Brewers (Toji). Simone Maynard is one of Australia’s most recognised sake professionals. She has been working in the sake industry as an educator, advocate and consultant for over ten years and in 2022 was awarded the honorary title of Sake Samurai.
Simone has travelled and lived in Japan where she developed her love of Japanese culture, cuisine and craftsmanship along with her deep passion and respect for sake and the people who brew it.
Her friendly, engaging personality and unwavering enthusiasm for all things sake make Simone the ideal host for these delightful 'sake-focused' cultural tours. Her personal connections to local brewers and artisans allow guests to enjoy unique experiences and gain valuable insight into the sake world.

Imanishi Seibei Store

Established in 1884 in historic Naramachi, this brewery produces the well-known “Harushika” brand, named after the legend that the gods residing at Kasugataisha Shrine came riding on its sacred animal, the deer. They ferment the malted rice in wooden bucket-like casks to preserve the most traditional methods.

This family-run brewery has been producing sake for over 300 years, using techniques passed down through generations. It is known for traditional Kimoto brewing, a labour-intensive method that develops natural lactic acidity for structure and depth, as well as for long-term ageing that creates greater complexity, roundness, and layered umami.

With its brewing history dating back to 1719, this brewery is located in Gose at the southern edge of the Nara Basin. It is best known for “Kaze no Mori,” launched in 1998 using locally grown rice and released as unfiltered, undiluted, unpasteurised sake—traditionally enjoyed only by brewers.

Nestled in the mountains of Yoshino, this brewery, dating back to 1912 is known for the “Hanatomoe” brand. It uses naturally occurring yeast and traditional Yamahai and Bodaimoto methods. By combining different fermentation tanks and wooden vats, it creates a distinctive acidity and layered character in its sake.

Dating back to 1660 at the foot of Omiwa Shrine—the oldest shrine dedicated to the "god of sake" and the "deity of brewing"—this brewery draws on over 360 years of tradition. Using local rice grown above the sacred spring and fermenting entirely in Yoshino cedar, it produces sake exclusively with Bodaimoto methods for a deeply traditional expression.

Founded in 1896, this brewery uses Yamahai methods for all sake and is known for its “Okura” label. Using its home-grown Hinohikari rice, it preserves the authentic flavour of local sake. Once brewed only as sacred offerings, its Dakushu is now available, bottled without straining the mash and offering a rich, almost “food-like” taste.
